Loaded Smashed Potatoes

Bacon (cooked, chopped)

Instructions
Boil the potatoes
Boil potatoes for 10-15 minutes, until fork tender.
Preheat oven and prepare baking sheet
Preheat oven to 232°C. Line a baking sheet with parchment paper.
Smash the potatoes
Evenly spread out potatoes on the baking sheet. Use a jar or glass to smash each potato.
Season and bake potatoes
Drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes.
Add bacon and cheese
Remove from the oven, add chopped bacon and cheddar cheese. Return to oven to bake for additional 5-8 minutes, until cheese is bubbly.
Prepare sour cream dip
Meanwhile, in a small bowl mix together sour cream, chives, garlic powder, onion powder, and salt and pepper.
Garnish and serve
Top off potatoes with green onion. Plate and serve with sour cream dip.
